2 lbs J&L Green Farm Meatballs
1/2 cup finely chopped onion
3 garlic cloves, minced
1/2 cup raw rice
salt and pepper, to taste
1 Quart J&L Green Farm beef broth
20 oz. can pineapple chunks
1 tbsp. corn starch
1/2 cup vinegar
1 tablespoon Worcestershire sauce
Combine ground beef, onion, garlic, rice, egg and salt and pepper in bowl. Shape into medium sized meatballs and place in 9x13 pan. Add beef broth cook at 350 covered for 60-90 minutes.
Drain juice from the pineapple and set aside. Mix corn starch with 1T of water to dissolve. In sauce pan, add corn starch mixture, pineapple juice, vinegar and Worcestershire sauce. Bring to a boil and reduce heat. Cook over medium-low heat until thick and syrupy.
Pour sauce over meatballs and carefully stir in the pineapple. Serve over rice or pasta.
